Taheenah Cake

Taheenah Cake

Taheenah Cake

I had the pleasure of sampling a yummy slice of Taheenah (Tahini) Cake. It was light, fluffy and exceptionally sweet. The Almonds made it extra special :) It goes great with a hot cup of whatever. There are quite a few versions of the recipe floating around in cyberspace. Here’s a couple of recipes if you’d like to try your hand at it…

Lebanese Tahina Cake – The Gourmet ShopperTahina is sesame seed paste, similar in theory to natural peanut butter and as a substitute, peanut butter works very well in this recipe. This cake has a rich, dense texture and makes a very good morning tea accompaniment. I like to bake this cake in a fluted cake tin, often called a kugelhopf tin.
  • 3 tablespoons sesame seed (black/whole)
  • 1 cup of tahina (sesame seed paste)
  • 3/4 cup caster sugar
  • 1/4 cup brown sugar
  • grated rind and juice of two oranges
  • 200g thick, plain yoghurt
  • 21/2 cups self raising flour
  • 1/2 teaspoon salt
  • 1 teaspoon mixed spice
  • 100g chopped pistachios
  • 6 dates, stones removed and flesh chopped
  • 3 tablespoons sesame seeds, additional
  1. Grease a 24cm cake tin generously and sprinkle with 3 tablespoons sesame seeds. Set aside. Preheat the oven to 170ºC.
  2. In the bowl of an electric mixer, beat the tahina, caster sugar, brown sugar and orange rind until thick and creamy. Add the orange juice and yoghurt. Continue to beat until combined.
  3. Fold in the self raising flour, salt, mixed spice, pistachio nuts, sesame seeds and chopped dates and mix thoroughly by hand until all ingredients are well mixed and distributed.
  4. Spoon the batter into the prepared cake tin and smooth the top.
  5. Bake at 170ºC for 45 minutes, or until cake is firm to the touch.
  6. Turn the cake out of the tin and allow to cool.
The Gourmet Shopper has tons of other appealing recipes such as; “The Mexican Tortilla Cake,” and the “Savory Eggplant & Goat’s Cheese Cake.”

  1. next to the Taheenah Cake you said almonds make it special, there were no almonds as far as I could see, can you clarify please.

  2. In the photo near the word “Diaries” are thin almond shavings.

Healthy Sidenote – Tahini is easy to digest and within half an hour of consuming it, the body is provided with a balanced supply of energy, vitamins, and minerals.

Tahini is a nutritional powerhouse, being high in vitamins E, F and T, as well as vitamins B1, B2, B3, B5, B6, B15, biotin, and choline. It is also a source of vitamin A. Tahini is also 20 percent complete protein – making it a richer protein source than milk, soya beans, sunflower seeds, and most nuts.

Tahini is one of the highest sources of methionine, an essential amino acid, and also contains lecithin, which reduces the levels of fat in the blood and also protects against environmental toxins such as nicotine. Tahini is also high in minerals such as magnesium, potassium, iron, and phosphorus, and is an excellent source of calcium. In fact tahini is claimed to be the best source of calcium there is and, unlike the dairy products that supply calcium in the western diet, it is not mucus forming.

Tahini is very high in oil, over 50 percent. However, despite being high in fat, most of the oil is unsaturated fat, which is much healthier for the body. Even though it is high in oil, tahini keeps very well and will not go rancid, even if it is not refrigerated after opening. This is because sesame seeds contain the natural preservatives sesamin and sesamol, which stabilise it.
